The tasks a Butcher is expected to perform include:
• Slaughtering animals, trimming carcasses and preparing standard meat cuts
• Killing or stunning the slaughter animal in the best possible manner
• Thrusting a knife into the jugular vein to drain off blood
• Flaying the carcass
• Opening and removing the entrails of the carcass
• Removing offal and washing down the meat
• Cutting and chopping the carcasses into standard meat cuts
• Cutting and chopping the meats into smaller portions according to customers’ requirements
• Performing one or more operations such as flayer, skinner, meat dresser, meat processor, etc.
• Refrigerating the slaughtered animals
