The tasks a Brew Master is expected to perform include:
• Supervising all the production activities in making beer and other malt liquors from grain
• Observing and supervising operations such as receiving, cleaning and steeping (soaking in water) of grain
• Germinating the grain
• Drying the germinated grain
• Making mash and extracting wort
• Performing the fermentation of wort and other processes in the manufacture of malt liquors, e.g., filtration, bottling, storing of liquors
• Giving specific instructions on handling each batch
• Tasting the liquor, giving directions as to the alteration of malt content and other composition changes, as necessary
• Ensuring the quality and quantity of production
• Controlling the stocks of barley, malt and different qualities of bear brewed and bottled
• Directing the repairs and alterations
